This is one of my FAVOURITE lunches of all time! I simply adore the flavour mix of this cooked sweet potato recipe, and it’s SO fast. (P.S. you can make it even faster by topping the potato with some pre-made Greek salad instead of the vegetable mixture!) Microwaving a sweet potato is the easiest way to cook a sweet potato and takes a fraction of the time as oven-baking. I bet you’ll be reaching for this healthy meal or side dish solution often once you learn how quick this cooking process is! This would taste extra yummy as a side to a classic roasted chicken.

Why Sweet Potatoes?

Before I dive into the recipe, let’s talk about why sweet potatoes are a superstar ingredient. Not only are they rich in vitamins (like Vitamin C), minerals, and fiber, but they’re also incredibly versatile. From savory dishes to sweet treats, sweet potatoes can do it all. Plus, their natural sweetness adds a delightful flavor to any recipe, making them a favorite among both kids and adults alike. I prefer to make savoury dishes with sweet potatoes, like this Greek inspired loaded potato!

Ingredients

  • medium sweet potato
  • Greek yogurt
  • cherry tomatoes, halved
  • chopped green peppers
  • chopped red peppers
  • crumbled feta cheese
  • Greek salad dressing
  • baby spinach leaves

Instructions

Start by thoroughly washing your sweet potato and then patting it dry. Next, pierce the potato several times with a fork to allow steam to escape while it cooks. Place it on a microwave-safe plate and microwave it on high power on one side for 3 minutes. Then, carefully flip it over and microwave it on the other side for an additional 2 minutes. Once the cooking time is up, let the sweet potato sit in the microwave for 2 minutes to finish cooking through. The cook time may vary based on the size of the sweet potato.

In a small bowl, mix together the halved cherry tomatoes, chopped green peppers, chopped red peppers, and Greek salad dressing until well combined. 

Once the sweet potato has cooled slightly, carefully slice it in half lengthwise with a sharp knife. Then, use a fork to score the insides of each half.

Spread the Greek yogurt on each sweet potato half.  Next, spoon the tomato and pepper mixture over the yogurt. Top it all off with a sprinkle of crumbled feta cheese for a tangy kick.

Garnish each sweet potato half with a handful of fresh baby spinach leaves. Not only do the spinach leaves add a pop of vibrant green color, but they also provide an extra dose of vitamins and nutrients. Serve your microwaved sweet potatoes immediately and enjoy!

Hint: Don’t forget to let your potato cool for a couple of minutes after taking it out of the microwave oven; it’s hot!

Substitutions

  • Greek Yogurt – instead of yogurt, you can use sour cream
  • Peppers – you could swap some of the peppers out for chopped onion if you want more of a kick!
  • Vegan – the yogurt could be replaced with coconut yogurt to make this dish vegan-friendly

Variations

A microwaved sweet potato is the perfect vehicle for lots of different toppings! Give these ideas a try:

  • Simple – a pat of butter, ground black pepper, garlic powder, and flaky sea salt are the perfect, simple toppings for a tender sweet potato. This is the perfect side dish for dinner!
  • Mexican – rather than a Greek salad mix, top your Greek yogurt on the potato with black beans, cilantro and a sprinkle of paprika
  • Dessert – make a sweet treat by topping the cooked potato with a sprinkle of cinnamon and brown sugar
  • Experiment – try a variety of your favorite toppings; pretty much anything you’d have on toast you can throw on a sweet potato!

Storage

You can store the microwaved whole sweet potato and topping separately in an airtight container in the fridge for up to 5 days. Make a batch at the beginning of the week to enjoy the whole week long!
