On busy school nights, I’m always looking for quick and easy dinner ideas. We often don’t have much time between school and the kids’ extracurricular activities, so something that’s fast to make is important. However, I don’t want to compromise on nutrition! This easy shrimp stir fry recipe is one of our family’s favourites. I use frozen mixed vegetables to make this meal nice & quick, and the homemade teriyaki sauce is absolutely delicious. You can serve this over rice, or make some zucchini noodles to go with it! The good news is, this easy dinner recipe can be prepped ahead of time and stored in an airtight container for the next day’s meal plan. It’s an easy weeknight dinner that the whole family will love.

Ingredients:

  • 1 lb large shrimp (raw, deveined shrimp)
  • mixed frozen stir fry vegetables
  • olive oil
  • soy sauce
  • rice vinegar
  • sesame oil
  • brown sugar
  • honey
  • ground ginger
  • garlic
  • cornstarch
  • crushed red pepper flakes
  • rice or noodles

Instructions for the Stir Fry Shrimp with Mixed Vegetables:

Put the soy sauce, vinegar, sesame oil, brown sugar, honey, ginger, chopped garlic, cornstarch and crushed red pepper flakes into a saucepan and mix. Heat over medium heat, and stir often. The sauce should thicken in a few minutes.

Meanwhile, heat the olive oil in a wok over medium-high heat. Add the mixed frozen vegetables and sautee until tender. Remove the teriyaki sauce from the heat when it’s thickened.

Place the cooked vegetables aside in a covered bowl, and then heat more olive oil in the pan. Peel the shrimp if needed, and then sautee them in the oil until just pink.

Add the vegetables back into the wok, and then add the homemade teriyaki sauce. Heat everything through, serve over rice or noodles and enjoy this simple shrimp with mixed vegetables recipe!

Ingredients
  

  • 1 lb large shrimp (raw, deveined shrimp)
  • 800 g mixed frozen stir fry vegetables
  • 1 tbsp olive oil extra virgin
  • 1/2 cup soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/4 cup brown sugar
  • 1 tbsp honey
  • 1 tsp ground ginger
  • 1 clove garlic minced
  • 2 tsp corn starch
  • 1/4 tsp crushed red pepper flakes

Instructions
 

  • Shake the corn starch in a lidded container with 2 tsp of water to make a smooth mixture.
  • Put the soy sauce, vinegar, sesame oil, brown sugar, honey, ginger, chopped garlic, cornstarch and crushed red pepper flakes into a saucepan and mix. Heat over medium heat, and stir often. The sauce should thicken in a few minutes.
  • Meanwhile, heat 1 tbsp olive oil in a wok over medium-high heat. Add the mixed frozen vegetables and sautee until tender. Remove the teriyaki sauce from the heat when it’s thickened.
  • Place the cooked vegetables aside in a covered bowl, and then heat the remaining olive oil in the pan. Peel the shrimp if needed, and then sautee them in the oil until just pink.
  • Add the vegetables back into the wok, and then add the homemade teriyaki sauce. Heat everything through, serve over rice or noodles and enjoy!

    This was delicious. However, if you are going to have a website for recipes, please proof read them. The instructions say to add sesame oil and ginger, both of which are not shown in the ingredient list. Would have given 5 stars if not for this mistake.
