Why This Simple Cottage Cheese Flatbread Recipe Works
One of the most satisfying aspects of this recipe is its simplicity. Bread-making often includes lengthy processes and a lot of ingredients. However, this 2 ingredient cottage cheese flatbread recipe strips it down to the essentials. All you need is cottage cheese and eggs. That’s it!
The magic happens when these two ingredients combine. Cottage cheese not only adds moisture and a subtle tang to the flatbread but also packs a protein punch, making this a nutritious option for any time of day. The eggs help to bind everything together, ensuring your flatbread has the perfect texture. I like using this bread to make a sandwich for lunch, or simply to eat plain for a snack! It’s such a great recipe that’s super-fast to make.

Instructions
Preheat your oven to 350°F (175°C). Line a quarter sized baking sheet with parchment paper & spray it with an olive oil spray to prevent sticking. Add the cup of cottage cheese, eggs and any seasonings desired into a blender or food processor.
Blend until the mixture is smooth and well combined. The batter will be fairly runny, similar to a thick pancake batter.
Pour the batter onto a quarter sized baking sheet lined with parchment paper, spreading it out evenly with a spatula to form a large, thin rectangle or circle. Aim for about 1/4 inch thickness.
Place the baking sheet in the preheated oven and bake for about 35-40 minutes, or until the flatbread is set and golden brown around the edges.
Allow the flatbread to cool completely on the baking sheet before removing it.
Slice the cottage cheese flatbread in half with a pizza cutter. Place any toppings you’d like on one half, fold it, and enjoy!
Tips for the Perfect Cottage Cheese Flatbread
- Let It Cool: For best results, make sure to let this flatbread cool completely before removing it from the baking sheet. If you try to remove it while it’s hot, your bread may fall apart.
- No Sticking: The parchment paper and cooking spray are both crucial to making sure this cottage cheese bread doesn’t stick to your pan.
- Consistency Matters: The batter will be fairly runny. If it seems too thick, add a tablespoon of milk or water. If it’s too thin, sprinkle in a bit more cottage cheese until you reach the right consistency.
- Even Spreading: Spread the batter as evenly as possible to ensure uniform baking.
- Don’t Overbake: Keep an eye on the flatbread as it bakes. You want it to be golden brown and set, but not overly dry.

I like to add a simple spice blend of garlic, salt and pepper to my batter for an easy flavour addition. You could also use italian seasoning, Everything Bagel seasoning, onion powder and/or garlic powder.
- Cheesy Delight: Mix in a half cup of shredded cheese – cheddar cheese, mozzarella cheese, or parmesan work wonderfully – for an extra cheesy kick.
- Sweet Sensation: For a sweeter version, add a tablespoon of honey or maple syrup to the batter. You could also mix in some dried fruits like raisins or cranberries.
- Seeds and Nuts: Add a handful of sunflower seeds, pumpkin seeds, or chopped nuts for added texture and nutrition.
