Peanut Butter Plant Based Energy Balls

These peanut butter energy balls almost taste like cookie dough, but they have nutritious ingredients.

- 1 cup natural peanut butter
- 1/4 cup pure maple syrup
- 2 tsp vanilla extract
- 1 cup rolled oats
- 1/2 cup hemp hearts
- 1/2 cup unsweetened shredded coconut
- 1/4 tsp salt
- ⅓ cup mini dark chocolate chips (look for sugar free) optional
In a large mixing bowl or a food processor, mix together all of the ingredients.
Form into 1 inch balls.
Refrigerate until firm (about 2 hours).
Store in a sealed container in the fridge for up to 5 days.
