Strawberry Spinach Salad with Maple Dijon Dressing

This sweet and savory salad is full of flavour and texture. A go-to salad for lunch or as a dinner side dish!

Equipment

  • 1 small mason jar

Ingredients
  

  • 1 cup spinach
  • 1 cup arugula
  • 1/2 cup strawberries chopped
  • 1/4 cup walnuts chopped
  • 1/4 cup feta cheese crumbled

Dressing

  • 1 tbsp maple syrup
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 2 tsp dijon mustard
  • 1/2 tsp granulated garlic
  • 1/4 tsp salt

Instructions
 

  • Combine all of the dressing ingredients into a small mason jar, place the lid on top, and shake vigorously until combined.
  • Place the spinach and arugula in a large bowl. Top with chopped strawberries, crumbled feta, chopped walnuts and chia seeds. Drizzle the maple dijon dressing over the salad & enjoy.
