  • 1 sweet potato medium
  • 1/4 cup Greek yogurt
  • 1/4 cups cherry tomatoes halved
  • 1/4 cups bell peppers chopped
  • 2 tbsp feta cheese crumbled
  • 1 tbsp Greek salad dressing
  • 1/4 cup baby spinach leaves

Instructions
 

  • Prepare the Sweet Potato: Start by thoroughly washing your sweet potato and then patting it dry. Next, pierce the potato several times with a fork to allow steam to escape while it cooks. This step is essential to prevent your sweet potato from bursting in the microwave.
  • Microwave the Sweet Potato: Place the pierced sweet potato on a microwave-safe plate and microwave it on one side for 3 minutes. Then, carefully flip it over and microwave it on the other side for an additional 2 minutes. Once the cooking time is up, let the sweet potato sit in the microwave for 2 minutes to finish cooking through.
  • Prepare the Toppings: While the sweet potato is cooling, it’s time to prepare the delicious toppings. In a small bowl, mix together the halved cherry tomatoes, chopped green peppers, chopped red peppers, and Greek salad dressing until well combined. This vibrant mixture will add a burst of flavor and color to your dish.
  • Assemble Your Masterpiece: Once the sweet potato has cooled slightly, carefully slice it in half lengthwise. Then, use a fork to score the insides of each half, creating a crisscross pattern. This step helps the toppings adhere to the sweet potato and ensures every bite is packed with flavor.
