These cheesy waffle-like bites of goodness are absolutely delicious, and a great alternative to a traditional waffle or a piece of bread.

- 2 eggs
- 1/2 cup cheddar cheese grated
Warm up the mini waffle iron, and then grate the cheese.
In a medium bowl, whisk the eggs. Add in the grated cheese and mix.
Pour 1 Tbsp of the egg & cheese mixture into the preheated mini waffle iron.
Cook for about 2 minutes or until the chaffle is crispy and golden brown on the edges.
- You may want to brush some olive oil on your waffle maker to make the waffles come out easier.
- You can use the batter to make one extra large chaffle using a traditional, regular sized waffle iron.
