Healthy Rainbow Zoodle Bowl

This delicious & colourful zoodle bowl is a healthy lunch idea, and it's so easy to throw together.

Equipment

Ingredients
  

  • 1/2 medium zucchini
  • 1 tbsp olive oil extra virgin
  • 1 tsp sea salt
  • 1/3 cup cherry tomatoes halved
  • 1/3 cup cucumber chopped
  • 1/3 cup cooked turkey breast chopped
  • 1/3 cup sweet bell pepper chopped
  • 1/2 cup baby spinach
  • 2 tbsp teriyaki sauce

Instructions
 

  • Spiralize the zucchini into noodle shapes and heat a pan on medium-high.
  • Add the olive oil to the pan, and then the zucchini noodles. Sprinkle the zoodles with sea salt and sautee them for about 5 minutes or until they are soft but not soggy.
  • Assemble the bowl by layering the cherry tomatoes, cucumber, cooked turkey breast, sweet bell pepper and baby spinach over the sauteed zoodles.
  • Drizzle the bowl with teriyaki sauce and enjoy.

Notes

  • You can substitute pre-made frozen zoodles for the fresh ones to make this bowl even quicker to assemble.
  • You can usually find pre-roasted sliced turkey breast in the deli meat area of your grocery store.
