Healthy Rainbow Zoodle Bowl

This delicious & colourful zoodle bowl is a healthy lunch idea, and it's so easy to throw together.

- 1/2 medium zucchini
- 1 tbsp olive oil extra virgin
- 1 tsp sea salt
- 1/3 cup cherry tomatoes halved
- 1/3 cup cucumber chopped
- 1/3 cup cooked turkey breast chopped
- 1/3 cup sweet bell pepper chopped
- 1/2 cup baby spinach
- 2 tbsp teriyaki sauce
Spiralize the zucchini into noodle shapes and heat a pan on medium-high.
Add the olive oil to the pan, and then the zucchini noodles. Sprinkle the zoodles with sea salt and sautee them for about 5 minutes or until they are soft but not soggy.
Assemble the bowl by layering the cherry tomatoes, cucumber, cooked turkey breast, sweet bell pepper and baby spinach over the sauteed zoodles.
Drizzle the bowl with teriyaki sauce and enjoy.
- You can substitute pre-made frozen zoodles for the fresh ones to make this bowl even quicker to assemble.
- You can usually find pre-roasted sliced turkey breast in the deli meat area of your grocery store.
